We produce soy sauce in wooden barrels using domestic soybeans and wheat. JAS certified organic after rigorous inspection. Founded in 1923, there is a viewing area in our storehouse, so you are welcome to watch the process.

The key to good koji is in the steaming of the soybeans
As boss and brewer, we are hands-on with everything from the steaming of the soybeans to the cultivation of the active koji cultures (aspergillus). We’ve woken up at 4 a.m. to steam the soybeans before changing into suits and heading to the airport for an overseas business trip. We often say “the key to good koji is in the steaming of the beans.”

We produce a wide range of soy sauces, from our JAS certified organic soy sauce to wood barrel-fermented soy sauce made with local soybeans and wheat.
